A friend brought this over for dinner. It was so good, I asked for the recipe 🙂 This is a mild recipe, so adjust the seasonings if you prefer spicier.
Ingredients
- 1 1/2 pounds chicken
- 1 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper to taste
- 2 cloves garlic chopped
- 1 tsp ginger grated
- 1 tsp garum masala
- 1 tsp ground paprika
- 1/2 tsp ground turmeric
- 1/8 tsp ground cayenne
- 6 Tbl butter separated
- 3-4 15 oz canned diced tomatoes strained
- 1 1/2 tsp sugar optional
- 1 c heavy cream
- Cilantro for garnish

Instructions
- Cut chicken into one inch chunks.
- Toss chicken with garlic powder, salt and pepper.
- Stir then set aside at room temperature.
- In small bowl, add garlic, ginger and remaining spices.
- Set instant pot to high/sauté and add 2 Tbl butter to melt.
- Add spices, and stirring constantly, cook until thick.
- Add tomatoes, sugar and chicken, stirring to get the bottom of the pan
- Cook on high pressure 6 minutes.
- Let natural pressure release 10 minutes.
- Stir in 4 tablespoons butter and cream.
- Check seasonings, adding more to taste.
- Serve with rice or naan
Recipe Notes
If you do not have an instant pot, simmer over low heat until chicken is cooked.
