Butter Chicken for Instant Pot

A friend brought this over for dinner. It was so good, I asked for the recipe 🙂 This is a mild recipe, so adjust the seasonings if you prefer spicier.

Chili Soup

This is just a very simple chili recipe with a beef and tomato soup base. It is easy to do in a stock pot, but if you prefer a crock pot, set the settings to low and cook all day.

The seasoning are on the very mild side. Be sure to adjust to your preferences.

Tamale Pie

Since we were planning on car camping, we wanted to try some new recipes. This turned out to be a favorite. It would also be a very easy week night meal.

Quick Chili

Needing a quick meal, we threw this together one night. If you have time, this is best if you prepare it a day ahead and then reduce to desired thickness while reheating the next day.

Serve with a green salad on the side and corn bread.

We use our homemade chili powder, but feel free to use your own special blend.

Egg Rolls

Even though egg rolls seem to be difficult to make, they really are not. They come together pretty quickly also. Since they are treats that we rarely make, we fry them, but you can also bake them if you prefer.

If you prefer, substitute the pork for chicken or mini shrimp. They are great without meat also!

Auntie Kristi’s Alfredo Sauce

Aunt Kristi gave Andrea this recipe.  She also included the directions for making a huge pot for camp 🙂  This is one of Andrea’s favorite ways to eat noodles.

If desired, add some cooked chicken pieces.  Serve with garlic bread and a colorful salad.

This is also great on zucchini noodles or your favorite steamed vegetables.
