Much better than store bought.
Ingredients
- 1/4 c butter
- 1/4 c chopped onion (we use a whole diced onion)
- 6 Tbl flour
- 3 c crushed tomatoes or tomato juice
- 1 c diced tomatoes or more crushed tomatoes
- 2 c chicken broth optional
- 2 tsp salt divided
- 1 Tbl sugar divided
- 1/4 tsp pepper
- 1 tsp garlic
- 1/4 tsp basil Very good with 1 Tbl dried basil!
- 1/4 tsp Oregano optional
- 1/4 tsp thyme optional
- 2 c milk warm
- 1/4 c heavy cream optional

Instructions
- Saute butter and onion
- Add flour to butter and onions, whisking until smooth and bubbly.
- Remove from heat.
- Gradually stir in tomatoes.
- Bring to a boil, stirring constantly for one minute.
- Stir in diced tomatoes and chicken broth.
- Combine spices (start with half the salt and sugar) and add to mixture.
- Add the warm milk to the soup.
- Add more seasonings if needed.
- Heat until very warm but not boiling and serve.
- Add heavy cream as serving if desired.
- Great with grilled cheese and a salad on a cold or rainy day.
