These are a nice, soft cupcake. Many who taste them say they are the “best” cupcakes they have ever had. She has also had a few people who do not like cupcakes compliment them and eat more than one.
Ingredients
Cupcakes
- 2 c sugar
- 3/4 c cocoa
- 1 3/4 c flour
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 eggs
- 1 c milk
- 2 tsp vanilla
- 1/2 c vegetable oil
- 1 c hot water
Buttercream frosting
- 4 c powdered sugar
- 2 tsp vanilla
- 1 c butter
- 1-2 Tbl milk
- 1/4 tsp salt
- food coloring optional
Servings: mini cupcakes
Instructions
Cupcakes
- Preheat oven to 350.
- Put all dry ingredients together.
- Add wet ingredients and mix until just combined.
- Pour into mini cupcake tins with liners. Bake for 15 minutes or until tooth pick comes out clean.
- Let cool.
For Frosting
- Cream all ingredients together.
- Put into piping bags.
- Enjoy decorating.
