Split Pea Soup

I never really liked split pea soup, but Allan mentioned that he liked it a few months ago. So, I decided to try it again. Surprise! I liked it 🙂 Proof it is always good to keep trying new things.

Ingredients

Instructions
  1. Saute onions, carrots, celery and garlic in butter until soft.
  2. Season with pepper.
  3. Sort and rinse split peas.
  4. In stock pot, add sauted vegetables, split peas, ham broth and bay leaves.
  5. Simmer until peas are tender, approximately an hour.
  6. If soup is too thick, add additional broth.
  7. If desired puree with stick blender.
  8. Add diced ham.
  9. Season with additional salt and pepper if needed.
  10. Simmer another 15-20 minutes to blend flavors.
  11. Garnish as desired.
  12. Serve with corn chips, garlic bread and/or a favorite green salad.
Recipe Notes

OPTIONAL: Simmer on low in crock for 4 hours before adding ham. Then simmer another hour or so.
