Carol Ragsdale gave me this favorite muffin recipe in South Africa around 23 years ago. It is a great, basic recipe that can be changed in so many ways. Leave plain, add chocolate chips or blueberries, or reduce the milk slightly and make banana muffins. Experiment and see how many combinations you can come up with, but to get you started, check out the options at the end of the recipe.
Ingredients
Optional Ingredients, mix or match
- 1/2 cup chocolate chips mini (optional)
- 3/4 cup fresh or frozen blueberries if frozen, will take longer to back
- 3/4 cup cranberries chopped
- 1/2 tsp lemon or orange peel
Servings: muffins
Instructions
- Combine dry ingredients.
- Make well and add remaining ingredients all at once.
- Stir JUST until moistened.
- Lightly grease muffin tins, sprinkle with sugar and fill baking cups 2/3 full. (These stick horribly to paper cups, so I do not recommend using.)
- Bake at 400 degrees F about 20 minutes till golden.
- Optional: Use 3/4 cup fresh or frozen blueberries (or chopped cranberries) plus 1 tsp lemon peel.
- Another Option: Reduce milk to 1/2 cup and add 3/4 cup mashed bananas and 1/2 cup nuts with egg mixture.
- Still another Option: Replace flour with part, or all, finely ground oatmeal flour.
