Ingredients

Optional Ingredients, mix or match

fresh or frozen blueberries
if frozen, will take longer to back

cranberries

lemon or orange peel
Instructions
Combine dry ingredients.
Make well and add remaining ingredients all at once.
Stir JUST until moistened.
Lightly grease muffin tins, sprinkle with sugar and fill baking cups 2/3 full. (These stick horribly to paper cups, so I do not recommend using.)
Bake at 400 degrees F about 20 minutes till golden.
Optional: Use 3/4 cup fresh or frozen blueberries (or chopped cranberries) plus 1 tsp lemon peel.
Another Option: Reduce milk to 1/2 cup and add 3/4 cup mashed bananas and 1/2 cup nuts with egg mixture.
Still another Option: Replace flour with part, or all, finely ground oatmeal flour.
