We had a friend come over who does not eat gluten or dairy. So we adapted a favorite breakfast recipe for her. It was slightly sweeter than the original, but still very good. For her, we made a quarter recipe and cooked it in a smaller casserole dish.
Ingredients
- 1/2 c melted butter OR melted coconut oil
- 3/4 - 1 cup brown sugar
- 2 beaten eggs OR 3 Tbl water + 1 Tbl ground flax
- 1 c milk OR coconut milk
- 3 c quick oatmeal gluten free if needed
- 2 tsp baking powder
- 1 tsp salt
- 1 c crushed walnuts or pecans optional
- 2 sliced apples optional
Servings: servings
Instructions
- If using flax egg, mix ground flax with water.
- Let sit at least 5 minutes.
- Combine all ingredients.
- Pour into 9x9 oiled casserole dish.
- Bake at 350 until cooked through, 25-30 minutes.
Recipe Notes
Can mix up the night before.
Also great with 1 cup canned cubed peaches or 1 cup raisins.
