I was reading a book about Alaska that mentioned these cookies. This is a combination of a few different recipes I found and us changing it a little.
If using sweetened coconut, reduce sugar!
Ingredients
- 1 c butter
- 1 1/2 - 2 c white sugar or half brown sugar
- 2 Tbl molasses omit if prefer to use part brown sugar
- 2 eggs
- 1 Tbl vanilla
- 1 1/2 c flour
- 1/2 tsp baking powder
- 1 tsp baking soda optional
- 1/2 tsp salt
- 1 c coconut flakes unsweetened preferred
- 1 c chocolate chips See notes
- 2 c oatmeal
- 1 1/2 - 2 c rice cereal
Servings: cookies
Instructions
- Preheat oven to 375 F.
- Cream butter, sugar and molasses until light and fluffy.
- Add eggs and vanilla and continue mixing until just combined.
- Add flour, baking powder and salt, mixing just until flour is all mixed in.
- Add coconut, chocolate chips and oatmeal and mix gently.
- Fold in rice cereal.
- Using 2 tablespoons of dough, roll into balls, and place onto parchment lined cookie sheet.
- Flatten cookies slightly.
- Bake at 375 F for 10-12 minutes until cookies are light brown around the edges.
Recipe Notes
Options for chocolate chips
- Best with combo of semi sweet and milk chocolate
- Replace part of chips with white chocolate chips
- Replace part of chips with lightly toasted nuts
