Ingredients
Instructions
  1. Preheat oven to 375 F.
  2. Cream butter, sugar and molasses until light and fluffy.
  3. Add eggs and vanilla and continue mixing until just combined.
  4. Add flour, baking powder and salt, mixing just until flour is all mixed in.
  5. Add coconut, chocolate chips and oatmeal and mix gently.
  6. Fold in rice cereal.
  7. Using 2 tablespoons of dough, roll into balls, and place onto parchment lined cookie sheet.
  8. Flatten cookies slightly.
  9. Bake at 375 F for 10-12 minutes until cookies are light brown around the edges.
Recipe Notes

Options for chocolate chips

  • Best with combo of semi sweet and milk chocolate
  • Replace part of chips with white chocolate chips
  • Replace part of chips with lightly toasted nuts
