Ingredients
- 1 pound large tomatillos 10-12 large
- 4 cloves garlic
- 1 1/2 Tbl olive oil
- 2 c chicken broth
- 1 jalapeno pepper or serranos
- 1/2 c chopped cilantro
- 1-2 tsp salt

Instructions
- Remove husks and wash tomatillos.
- On large baking sheet, roast tomatillos and jalapeno under very hot broiler 5 minutes.
- They will blacken in spots.
- Flip and roast additional 5 minutes.
- Cool slightly before transferring to food processor or blender with all the juices.
- Add garlic and process until smooth.
- Heat oil in saucepan until very hot.
- Add puree all at once and stir until thicker and darker, about 5 minutes.
- Add 2 cups broth and simmer over medium heat until thick enough to coat spoon heavily, about 10 minutes.
- Season with salt to taste.
