While these are not exactly like the potatoes at my favorite food vendor at the fair, they are inspired by them. Serve them with sausage or grilled beef.
Ingredients
- 10 medium red potatoes
- 1 medium vandalia onion
- 1 red pepper
- 1/4 cup butter
- salt to taste
- pepper to taste
- granulated garlic to taste

Instructions
- Boil potatoes until still slightly firm.
- Cut into bit size pieces.
- Chop onion and red pepper into slices.
- Melt butter in heavy pot. Add onions and start sauteing.
- Add peppers and then add potatoes.
- Stir to coat veggies well
- Season to taste.
- Either continue cooking on stove until veggies start turning brown or grill in heavy pot while grilling your favorite meal.
- Serve warm.
