I had never tried ground cherries before, but we were given a bag of them. We enjoyed eating them raw, but Mark said he had the perfect recipe for them. He was right.
Ingredients
- olive oil
- 3 pound pork loin boneless
- 1 large onions
- 1 cup ground cherries
- 2 cloves garlic
- 1 hot pepper
- white cooking wine to taste
- salt to taste
Servings: servings
Instructions
- Cut pork loin into medallions
- Slice onion, crush garlic and dice pepper.
- Using oil, caramelize the onion with pepper in it adding salt as needed.
- (Recommend saltier than normal salt because it will be used over pork)
- Add a bit more oil, garlic and ground cherries.
- Cook until cherries are soft.
- Crush ground cherries and add some cooking wine and water to make a stew and simmer to reduce by half.
- Add pork and cook until done, turning pork as needed.
- Season to taste.
- Very good with favorite braised potatoes with basil and a green salad.
