Pork Loin with Ground Cherries

Ingredients
olive oil

pork loin
boneless
1
large onions
1
cup
ground cherries
2
cloves
garlic
1
hot pepper
white cooking wine
to taste
salt
to taste
Instructions
Cut pork loin into medallions
Slice onion, crush garlic and dice pepper.
Using oil, caramelize the onion with pepper in it adding salt as needed.
(Recommend saltier than normal salt because it will be used over pork)
Add a bit more oil, garlic and ground cherries.
Cook until cherries are soft.
Crush ground cherries and add some cooking wine and water to make a stew and simmer to reduce by half.
Add pork and cook until done, turning pork as needed.
Season to taste.
Very good with favorite braised potatoes with basil and a green salad.
