A simple oatmeal cookie without any flour. Be sure to check your oats if you need them to gluten free.
Ingredients
- 1 1/2 - 2 c sugar
- 1 Tbl molasses
- 1/2 c unsalted butter softened
- 2 large eggs
- 1 1/2 c favorite nut butter (we used smooth peanut butter)
- 1 Tbl vanilla extract
- 2 tsp baking soda
- 1/2 tsp salt
- 4 1/2 c oats old fashioned or quick
- 1 c M&M's mini ones are fun also
- 1 c chocolate chips
- Candy eyes optional
Servings: dozen
Instructions
- Pre-heat the oven to 350°F.
- Line baking sheet with parchment paper.
- Cream together the sugar, molasses and butter until light and fluffy.
- Beat in the eggs, one at a time, until well incorporated.
- Mix in peanut butter, vanilla, baking soda and salt until well combined.
- Add the the oats and mix until combined, then add M&M's and chocolate chips.
- Scoop 2 tablespoon mounds of the dough onto the prepared baking sheets, at least 2 inches apart.
- Bake the cookies for 12-15 minutes, they will be slightly underbaked.
- Remove and let cool 5 minutes on baking sheet.
- Add candy eyes, if using, to the cookies immediately after you remove them from the oven.
- Cool completely on wire rack.
