Grandma Mabel’s Chili

We were given this recipe during the McGuire 2003 family reunion. We have adapted it a little, but tried to keep it very close to the original. Serve with saltines or your favorite corn bread.

Ingredients

Instructions
  1. Soak beans overnight.
  2. Drain water, add more and then simmer beans until tender.
  3. Saute meats 15 minutes in large pan, then drain if needed. Set aside for now.
  4. In same pan, saute peppers in oil 5 minutes.
  5. Add onion and cook until tender.
  6. Add tomato sauce and simmer 5 minutes.
  7. Add garlic and parsley.
  8. Add cooked and drained beans.
  9. Add spices and accent.
  10. Simmer covered an hour. Stirring occasionally.
  11. Uncover and simmer for another 50 minutes.

*Grandma's original recipe calls for tomato soup.

**Instead of dry beans, feel free to substitute 4 cans of drained and rinsed pinto or kidney beans.
