We were given this recipe during the McGuire 2003 family reunion. We have adapted it a little, but tried to keep it very close to the original. Serve with saltines or your favorite corn bread.
Ingredients
- 4 15 oz cans tomato sauce *
- 4 chopped green peppers (red peppers are good too)
- 4 chopped onions
- 1 1/2 Tbl vegetable oil
- 2 crushed garlic cloves
- 1/2 cup chopped parsley
- 3 pound ground beef
- 1 pound ground lean pork or sausage
- 1 tsp cumin
- 1/2 cup chili powder
- 2 Tbl salt
- 1 1/2 tsp pepper
- 1 1/2 tsp accent seasoning optional
- 1/2 pound pinto beans **
- 2 cups water if using canned beans (or beef broth)

Instructions
- Soak beans overnight.
- Drain water, add more and then simmer beans until tender.
- Saute meats 15 minutes in large pan, then drain if needed. Set aside for now.
- In same pan, saute peppers in oil 5 minutes.
- Add onion and cook until tender.
- Add tomato sauce and simmer 5 minutes.
- Add garlic and parsley.
- Add cooked and drained beans.
- Add spices and accent.
- Simmer covered an hour. Stirring occasionally.
- Uncover and simmer for another 50 minutes.
Recipe Notes
*Grandma's original recipe calls for tomato soup.
**Instead of dry beans, feel free to substitute 4 cans of drained and rinsed pinto or kidney beans.
