German Pancakes

We do not make these pancakes often, but they are very good. Allan said that his mom taught the recipe to him when he was 8 or 9 and he has enjoyed making them occasionally since for special mornings. It is a chance for us to enjoy each other as we take the time to enjoy filling our pancakes and eating them individually.

There are many recipes for German pancakes. Most use a different ratio of eggs to flour and liquid. The pancakes are usually rolled or folded in half and then half again (quartered) and the fillings are unique to each family. This is our families favorite recipe though.

Ingredients
Servings: 7 inch pancakes
Instructions
  1. Whisk all the ingredients together.
  2. There may be a few small lumps, that is okay.
  3. Pour a very thin layer onto a warm pan. We prefer cast iron.
  4. Quickly move pan to spread batter into large circle.
  5. Cook on the one side till lightly brown.
  6. Turn and cook until second side is slightly browned.
  7. Serve warm pancakes with fillings on the side.
  8. Let everyone finish their individual pancake with filling of choice, roll and eat.
  9. Repeat until pancakes are gone.
  10. Some filling suggestions are Nutella, jam, or our favorite, lemon.
  11. To make lemon filling use butter, powdered sugar and lemon juice to taste.
  12. Add +/- 1/2 tsp butter to warm pancake.
  13. Top with +/- 1/2 Tbl powdered sugar.
  14. Add lemon juice to taste.
  15. Mix well and then carefully spread over pancake.
  16. Roll and eat.

  1. Yum!! My great Aunts made these when we went to visit them in Clay Center, Kansas when I was only 8or9. They were immigrants from Germany.
