Ingredients
Cake
- 3/4 c oil
- 3/4 c applesauce
- 1 1/2 - 2 c sugar
- 4 eggs
- 2 c flour
- 2 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 3 c carrots peeled and grated
- 1 c chopped almonds or walnuts
Frosting
- 8 oz cream cheese softened
- 1 stick butter melted
- 2 Tbl vanilla
- 1 tsp grated orange peel
- 1 pound powdered sugar

Instructions
Cake
- Grease and flour 2 round pans or a Bundt pan.
- Mix oil, applesauce, sugar.
- Add eggs, beating after each.
- Stir in flour, baking soda, salt and cinnamon.
- Fold in carrots and nuts.
- Pour into prepared pan.
- Bake at 325 degrees for 1 1/4 hours.
- Let sit for a few minutes before removing to cool on rack.
- Let cake cool completely.
Frost
- Whip frosting ingredients together.
- Frost as desired.
