peeled and grated

chopped almonds or walnuts
Frosting

cream cheese
softened

butter
melted

vanilla

grated orange peel

powdered sugar
Instructions
Cake
Grease and flour 2 round pans or a Bundt pan.
Mix oil, applesauce, sugar.
Add eggs, beating after each.
Stir in flour, baking soda, salt and cinnamon.
Fold in carrots and nuts.
Pour into prepared pan.
Bake at 325 degrees for 1 1/4 hours.
Let sit for a few minutes before removing to cool on rack.
Let cake cool completely.
Frost
Whip frosting ingredients together.
Frost as desired.
