Angel Food Cake Gluten Free

It is best to make this on a day with low humidity. Fresher eggs are best to use, otherwise the cake may “weep”.

Sea Foam (Updated)

We discovered this candy a few years ago while browsing a candy store. Mark quickly declared it was his favorite candy ever. When looking for “sea foam”, we realized this candy comes with many different names; honeycomb candy, sponge candy, or fairy food.

For fun, we decided we needed to learn how to make his favorite treat. At first, we could not find any recipes or information about it, except in an old cookbook. However, now we can find different recipes for it in cookbooks or looking on line.

This is not a super hard recipe to make, but sometimes it turns out wonderfully and other times it is a little finicky. We have not learned why, but it is a great reason to make more.

We prefer the candy with a touch of molasses (or dark corn syrup) but it is just as good either way. However, the candy lasts longer coated in chocolate, so we highly recommend that if you want to save for longer.

Red Hot Cinnamon Popcorn

Andrea requested a not sweet snack. We thought cinnamon popcorn might do the trick.

Nope. It didn’t. But the rest of us thought it was very good!

Cardamom Apple Jam

Some good apple choices are Golden delicious, a mixture of Granny Smith and Pink Lady, or a mixture of whatever you have. We used an unknown apple from a friends tree.

While this is good as a jam, it is also very good over vanilla ice cream!

Baked Beignets

This is one of the recipes Andrea made in Culinary Class this week. I think we all agree it may be our very favorite recipe so far this year. (Ummm, schoool year 🙂 )

Cinnamon Rolls (with Caramel Option)

This recipe is one we often use for Christmas or for the children’s breakfasts as they head to summer camp. They are easy to turn into caramel rolls by a simple step that I included.

If you prefer to make the dough early, you can form the rolls, place in pan and then cover with heavy aluminum foil. Place in the refrigerator at least 12 hours, but not longer than 24. Then, when ready to bake, place unwrapped pan in cold oven and bake until golden brown (35-40 min).

This is our favorite caramel recipe. We have tried a few other ones, but always come back to this.
