Mom really likes Red River Cereal and wanted me to try it. I agree. It is very good! However, it takes awhile to cook, so we decided to look for muffin recipes that use it. After cooling the muffins, we freeze them for an easy breakfast. Just remember to pull early so they can thaw out.
Ingredients
Dry ingredients
- 3/4 cup old fashioned oats or quick oats
- 1/4 cup dry buttermilk powder
- 1 cup flour
- 1/2 - 3/4 cup sugar
- 2 Tbl molasses
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
Wet ingredients
- 1 1/4 cup Red River Cereal cooked, unsalted
- 1 egg
- 1/3 cup butter melted
- 2 Tbl Water
- 1 cup chopped dates (or raisins)
Optional Topping
- 1/2 cup pecans or other favorite nuts
Servings: muffins
Instructions
- If using raisins, soak in the 2 Tbl water. Set aside.
- Combine dry ingredients, except dates.
- Add butter, water and egg to cooked cereal mixture.
- Add dry ingredients; mix well.
- Stir in dates.
- Spoon into 12 greased muffin tins.
- Bake at 375 degrees for 20-25 minutes or until set.
- Turn out to cool and store in airtight container, if there are any to store.
- Sprinkle top with nuts if desired.
