When we first started learning to make desserts, this is one of the first, and easiest truffles we learned. Have fun experimenting with your own variations!
Ingredients
- 8 oz cream cheese softened
- 2 c sugar powdered
- 2 c chocolate chips semisweet
- 1 1/2 t vanilla extract or favorite oil based extract
- 1 c chocolate for melting
- 2 c dark chocolate chips
For Peanut Butter Variation
- 1 c peanut butter
- 2 Tbl heavy cream
For Chocolate Raspberry variations
- 2 Tbl raspberry preserves
For Nut Variation
- 60 Hazelnuts or almonds
Servings: dozen
Instructions
- Melt chocolate chips your favorite way.
- Beat cream cheese until smooth.
- Add powdered sugar and beat until smooth.
- Stir in melted chocolate and vanilla (add peanut butter or preserves if using) until no streaks remain.
- Chill until firm.
- Shape into 1 inch balls. (Formed around nut if using)
- Chill again.
- Melt dark chocolate chips and melting chocolate in double boiler.
- Dip truffles balls and set aside to cool.
- Redip if desired.
- Optional: Instead of dipping in chocolate, roll in ground nuts, cocoa or powdered sugar.
