This is a sweet, but not overly sweet shortcake. It makes a great base for strawberries or other favorite berries. While we often use whipped cream with this, vanilla ice cream also works well.
Ingredients
- 1/4 cup butter
- 2/3 cup sugar
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 cups flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1 pint whipped cream *
- 3 pints strawberries sliced

Instructions
- Cream shortening and sugar.
- Add egg and vanilla; beat well.
- Combine dry ingredients; add to the creamed mixture alternately with milk.
- Spread in a greased 9 inch round or square baking pan.
- Bake at 350 degrees F. for 20 to 25 minutes.
- Cool on wire rack.
- Divide into 9 even pieces. If desired split each piece in half horizontally.
- Spoon whipped cream and strawberries onto bottoms; replace tops.
- Garnish with more berries and whipped cream.
- Serve immediately.

If desired, us an 8 or 9 inch round cake pan instead of a square one.
