Since we were planning on car camping, we wanted to try some new recipes. This turned out to be a favorite. It would also be a very easy week night meal.
Ingredients
- 2 Tbl oil
- 1 pound ground beef or chicken
- 2 -15 oz cans black beans drained
- 16 oz tomatillo sauce
- 1 pound polenta in tube
- 2 c sharp cheddar cheese
- Salt to taste
- pepper to taste

Instructions
- Brown meat in oil and cook through.
- Add beans and salsa.
- Stir to combine.
- Season to taste and reduce heat to low.
- Cut polenta into 1/2 inch rounds and layer on top.
- Cover with cheese.
- Cook until cheese is melted and polenta is heated through.
- Season again if desired.
Recipe Notes
This recipe is so versatile. Replace the black beans with pinto beans, use salsa instead of tomatillo sauce, use your favorite Mexican cheese instead of cheddar. Enjoy creating your favorite version of this simple meal.
