May 23rd is National Salt Water Taffy day. Here is a great recipe to try!
Ingredients
- 1 c sugar
- 1 Tbl cornstarch
- 1 Tbl unsalted butter
- 2/3 c corn syrup
- 3/4 tsp salt
- 1/2 c Water
- 1 tsp vanilla extract
- Flavorings See notes below
- food coloring optional
Servings: dozen
Instructions
- Combine the first seven ingredients together in a large pot (if making only one flavor, you can add in the flavoring and food coloring now if desired).
- Heat over medium heat, whisking occasionally until everything is combined.
- Continue heating mixture over medium heat (no need to stir) and cook until the sugar mixture reaches 250F.
- Pour onto a silicone mat lined (or greased) heatproof baking sheet with sides. (One sheet per flavor)
- Immediately add in desired flavorings and colorings then stir.
- Mixture is very hot; allow to cool until able to safely handle the mixture.
- Grease your hands and stretch and fold the mixture until it is stiff, glossy, and hard to pull.
- Roll the taffy into a log of desired circumference, grease a pair of scissors or a knife and cut to desired size.
- Wrap each piece of taffy on a square of wax paper, twisting the edges to seal.
- Watch as they all disappear.
Recipe Notes
*If using an extract, assume about 1/2 teaspoon per whole batch. If using a strong juice (such as lemon), use at least a tablespoon per batch.
