Ricotta Gnudi

This is an Italian dish that Andrea taught me for “cultural immersion” cooking class . This is excellent with Andrea’s Vodka sauce.

Instructions
  1. Starting with one egg, mix everything together to form a slightly sticky dough.
  2. If dough is dry, add a second egg. If too wet, add more flour.
  3. Form into balls.
  4. Boil water and add noodles.
  5. When noodles float, they are done.
  6. Serve with favorite sauce and a salad on the side.
Recipe Notes

These can be made ahead.  Form noodles and then place on flat sheet that was sprinkled with cornmeal.  Keep in refrigerator until ready to use later that day.
