Pumpkin Chocolate Chip Cookies

A soft, cake like cookie. This is a very sweet cookie, so reduce sugar if desired. While mini chocolate chips are preferred, I think these are best with a mix of dark chocolate and milk chocolate chips.

Ingredients
Servings: dozen
Instructions
  1. Cream together butter, sugar, pumpkin and vanilla.
  2. Mix in remaining ingredients (save chocolate chips till last).
  3. Mix well.
  4. Drop on cookie sheet, bake 10-12 minutes at 375.
  5. Cool, and enjoy.
Recipe Notes

Optional: Replace 2 cups of pumpkin with 15 oz canned pumpkin.
