A soft, cake like cookie. This is a very sweet cookie, so reduce sugar if desired. While mini chocolate chips are preferred, I think these are best with a mix of dark chocolate and milk chocolate chips.
Ingredients
- 1 c softened butter unsalted
- 1 1/2 - 2 c sugar granulated
- 2 c pumpkin puree
- 2 tsp vanilla extract
- 2 tsp baking soda
- 2 tsp baking powder
- 1 tsp salt
- 1 tsp cinnamon
- 4 c flour all purpose
- 2 1/2 c chocolate chips mini preferred
Servings: dozen
Instructions
- Cream together butter, sugar, pumpkin and vanilla.
- Mix in remaining ingredients (save chocolate chips till last).
- Mix well.
- Drop on cookie sheet, bake 10-12 minutes at 375.
- Cool, and enjoy.
Recipe Notes
Optional: Replace 2 cups of pumpkin with 15 oz canned pumpkin.
