Andrea learned how to make these cookies while working in the kitchen over the past few summers. This is our favorite way to make them.
Ingredients
- 1 cup butter softened or melted
- 3/4 - 1 cup sugar
- 3/4 - 1 cup packed brown sugar
- 2 eggs
- 1 tsp vanilla
- 2 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 1.5 - 2 tsp cinnamon
- 3 cups quick oats
- 1/3 c raisins soak in orange juice and drain before adding
- 1/3 c dried cranberries unsweetened is best
- 1/2 c chocolate chips
Servings: large cookies
Instructions
- Cream butter and sugars till creamy.
- Beat in eggs, then add vanilla.
- Mix in dry ingredients (no oats) until well blended.
- Mix in quick oats.
- Add in raisins, chocolate chips or favorite additions if using.
- Chill dough at least one hour. Preheat oven to 350 degrees.
- Drop by 1/4 cup onto parchment covered baking sheet.
- Bake 8-10 minutes in 350 degree oven.
Recipe Notes
Optional: Use a cup or more of your favorite add ins. This is a great base for limitless variations. Optional: Make smaller cookies and adjust baking time as needed.
