Instructions
  1. Heat oven to 300 F.
  2. Bring lemon zest, lemon juice, sugar and butter to a simmer.
  3. Temper with eggs and yolks.
  4. Cook on low heat stirring constantly until thickened.
  5. Pour into baked tart/pie crust and bake till set.

This is good for many things other than tarts.  Be creative!
