This is our attempt at our favorite store bought granola.
Ingredients
- 1/2 c homemade cashew butter
- 1/2 c maple syrup
- 1/2 c coconut oil
- 3 1/2 c oatmeal
- 1/2 c oat flour
- 1 c cashew pieces
- 1/2 c green pumpkin seeds pepitas
- 1/2 c unsweetened coconut
- 1/2 c Crispy Rice we used Nature's Path
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 2 tsp brown sugar
- 1/2 tsp ground ginger
- 1 tsp kosher salt divided
- 1 c bittersweet chocolate chips
Servings: cups approximetely
Instructions
- Preheat oven to 300 degrees.
- In small pan, melt coconut oil with cashew butter, vanilla and maple syrup.
- In a large bowl, combine oatmeal, oat flour, cashews, pumpkin seeds, coconut, rice cereal, brown sugar, ginger and 1/2 tsp salt.
- Pour the liquid ingredients over the dry ingredients and combine well.
- Spread on cookie sheet so all pieces have room.
- Bake for about 20 minutes.
- Stir granola before baking for an additional 15-20 minutes.
- Stir every 5 minutes or so to keep from burning.
- Remove from oven; sprinkle with the other ½ teaspoon salt and chocolate chips.
- Gently toss them together.
- Cool completely before storing in an air tight container .
Recipe Notes
To make cashew butter, roast raw cashews until lightly brown. Cool slightly before blending until desired consistency.
