Instructions
  1. Preheat oven to 300 degrees.
  2. In small pan, melt coconut oil with cashew butter, vanilla and maple syrup.
  3. In a large bowl, combine oatmeal, oat flour, cashews, pumpkin seeds, coconut, rice cereal, brown sugar, ginger and 1/2 tsp salt.
  4. Pour the liquid ingredients over the dry ingredients and combine well.
  5. Spread on cookie sheet so all pieces have room.
  6. Bake for about 20 minutes.
  7. Stir granola before baking for an additional 15-20 minutes.
  8. Stir every 5 minutes or so to keep from burning.
  9. Remove from oven; sprinkle with the other ½ teaspoon salt and chocolate chips.
  10. Gently toss them together.
  11. Cool completely before storing in an air tight container .
Recipe Notes

To make cashew butter, roast raw cashews until lightly brown.  Cool slightly before blending until desired consistency.
