Backpacking Upside Down Pineapple Cake

It is always nice to have some sort of treat while backpacking. We usually save this treat for an extra hard day on the trial or the very last night out. It does not make a lot, we usually make two batches for the seven of us, but it is enough for something special.

This also works at home. Use canned pineapple slices and skip the step for re-hydrating.

  1. To do at home; either purchase dried pineapple or dehydrate a can of pineapple slices or chunks. Place 6 slices in small ziplock. Label.
  2. Put brown sugar in a small bag and label.
  3. Using a small ziplock bag, mix together flour, baking powder and salt. Add butter and work in, label "baking mix".
  4. On note card, write directions.
  5. In larger bag, place all ingredients and directions together.
  6. While camping: Pour ¼ cup water in baking mix bag.
  7. Knead sealed bag with fingers to mix. Will be messy.
  8. Set aside for a little bit.
  9. In a pot boil 1 cup water and add pineapple.
  10. Let sit for 20 min off heat.
  11. Turn heat on and slowly boil for 10 min.
  12. Sprinkle brown sugar on top. Do not stir.
  13. Lower heat.
  14. Drop dough over the pineapple, spreading with spoon if needed.
  15. Cover and steam for 10 min.
  16. With a toothpick test for doneness, dough should be cooked through.
  17. Cool slightly before enjoying.
