I am not sure where we found this recipe, but it is one of our top favorites. The tamales do take a good afternoon to prepare, but there is often extra to share or to freeze.
Look for the corn husks at a Mexican store if there is one near you. Soak the dried beans over night before cooking, or see notes to use canned beans. Be sure to soak the corn husks a few hours ahead of time. Homemade tomatillo sauce is recommended.
We found a spice mix on the clearance rack and then discovered we could not find it anymore! So Adrian spent some time experimenting and came up with a very similar blend. It is great on chicken or on popcorn.
This is just a very simple chili recipe with a beef and tomato soup base. It is easy to do in a stock pot, but if you prefer a crock pot, set the settings to low and cook all day.
The seasoning are on the very mild side. Be sure to adjust to your preferences.
We were given this recipe during the McGuire 2003 family reunion. We have adapted it a little, but tried to keep it very close to the original. Serve with saltines or your favorite corn bread.
We found this recipe a few years ago and I can not remember where. It is a favorite topping for popcorn. We often double or triple the batch so we have it on hand.
