Lemon Zucchini Bread (or Cake)

With zucchini growing nicely this year, Mom looked for a new recipe to use some of the extra up. She gave us a loaf of this bread that Adrian decided was a lot better than the chocolate cake we usually make because of the lemon.

The loaf Mom gave us was frozen and it defrosted very nicely. She recommended not glazing it until ready to eat. We decided to only make half the glaze and it was plenty.

Backpacking Upside Down Pineapple Cake

It is always nice to have some sort of treat while backpacking. We usually save this treat for an extra hard day on the trial or the very last night out. It does not make a lot, we usually make two batches for the seven of us, but it is enough for something special.

This also works at home. Use canned pineapple slices and skip the step for re-hydrating.

Baked Oatmeal (no dairy, no eggs and GF options)

We had a friend come over who does not eat gluten or dairy. So we adapted a favorite breakfast recipe for her. It was slightly sweeter than the original, but still very good. For her, we made a quarter recipe and cooked it in a smaller casserole dish.

Lady Fingers (Savoiardi)

I do not think I ever had a ladyfinger cookie until Mark was teething. We could not find “normal” teething biscuits, so we bought ladyfingers instead. They were also good with tea.

Years later, I discovered they were also a main ingredient in tiramisu. They are available at stores, but not often easy to find. So we learned how to make our own.

These are just a very simple chocolate chip bar cookie.

Angel Wings (Polish Chrusty)

Called by many names, Chruściki, Bowties, Faworki and Angel Wings, these are Polish treat’s that my parents would enjoy when newly married. Daddy said that he would enjoy them with my grandfather around lunch before Lent. Grandpa would buy the treats and he and Daddy would have most, if not all the box eaten before getting home.

These are best the same day they are made.

Pumpkin Muffins

This is a simple, dairy and gluten free biscuit from my friend Mari G. The biscuit does not contain eggs, but adding a hard boiled egg and fruit is a simple way to make an easy picnic lunch.

Grandma Reble’s Cornbread

Cornbread goes with so many meals, but it is especially good with chili! This recipe makes a very small batch, but you can double it and bake in larger pan if desired.

Strawberry Shortcake

This is a sweet, but not overly sweet shortcake. It makes a great base for strawberries or other favorite berries. While we often use whipped cream with this, vanilla ice cream also works well.

Buttermilk Biscuits

These are super easy biscuits to make. I often start the dough ahead of time and place it in the refrigerator. Then I pull it out and finish it just before I want to bake the biscuits.
