Gluten Free Sandwich Bread

When Allan started cutting gluten from his diet, a friend from work gave him this recipe. It is good fresh, but we think it tastes better toasted. It works very well for sandwiches also.

A few helpful hints on this bread:

  • To keep gluten free, but sure to check ingredient labels.
  • The bread will stick, so use a nonstick bread pan or grease the pan well. If it does stick, let it sit a few minutes before trying to remove from pan.
  • Do not let the dough rise over the pan, it will “boil over” and make a mess.
  • Also, be sure to bake the bread long enough. It may sound hollow, but still be sticky inside. A thermometer should read between 208-210 when done.
  • Let cool before cutting. It does not have to be completely cooled though.

Hummus

There are so many uses for hummus! This is just a starting point recipe for reference. Adjust the seasonings, garlic and tahini to your personal taste.

Grain free, Egg Free Chocolate Chip Cookies

We have many friends with food allergies. We were looking for a good dessert recipe that we could share at potlucks that was gluten free, egg free and dairy free. These are simple cookies to make and they taste great!

Biscotti-Grain free

I am not sure where we found this recipe.  I have played with it and adapted it some to our tastes.

Tiramasu

I first discovered tiramisu when we went to an unschooling home school event at a waterpark.  Mark had pointed out a desert that he thought looked good, it looked like pudding in a chocolate bowl.

Later that day, Allan asked me what special treat I wanted.  So many looked good, but I decided to try Mark’s suggestion.   I have been hooked ever since.

We have tried different recipes, but this is our favorite version of it.  It works with either regular or gluten free lady fingers.

Lady Fingers-Gluten Free

Andrea commented that she really wanted tiramisu for dessert.  We looked in three stores before finding lady finger cookies.  We did not find gluten free ones at all.  So we decided to try to make our own.

The recipe we tried was very easy.  The cookies crisped up and are wonderful for dunking in hot drinks or just eating plain.


Chocolate Chip Cookies with Date Sugar

I discovered some date sugar at a discount store and really wanted to try it.  I had read that you could interchange it with brown sugar, but it did not mix in as well as regular sugar did.

We decided to start with our favorite cookies and experiment.  The cookies are soft and cake like, but very good!  I thought they were a little to sweet, so next time I will reduce the sugars.  But everyone else thought they were perfect.

These cookies work well with regular flour if you do not want them gluten free.

Gluten Free Dark Chocolate Brownies

Andrea wanted a less sweet grain free brownie.  It is slightly crumbly and a little dry, but goes wonderfully with ice cream or whipped cream.

If you want it sweeter, replace part or all of the unsweetened chocolate with semi sweet baking chocolate.
