I really wanted a hot, freshly baked, chocolate chip cookie. We enjoyed my experiment so much I made a second batch with the boys, but made them “gourmet”. I let the boys chose which M&M’s and they chose peanut, peanut butter and a few of the plain ones. They were the perfect “New Year Party” cookies.
Ingredients
- 1 1/4 cup sugar
- 1 cup butter
- 2 Tbl Tbl molasses
- 1 1/2 tsp vanilla
- 1 egg
- 1 1/4 cup flour unbleached
- 1 cup almond flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2-1 tsp cayenne or paprika optional
- 3/4 tsp salt
- 1/2 cup chocolate chunks dark chocolate recommended
- 1 cup M&M's
Servings: dozen
Instructions
- Beat together sugar and butter.
- Add in molasses, vanilla and egg and mix well.
- Stir in dry ingredients.
- Fold in chocolate chips and M&M's.
- Drop by teaspoon on to parchment lined cookie sheet.
- Bake in preheated 350 degree oven until done, about 10-12 minutes.
- Edges will be browned but middles will be slightly undercooked.
- Let cool a minute before putting on cooling rack to cool completely.
