
This dessert is hard to describe, sort of lemon cake, sort of brownie texture. It is a nice change from what we usually make.
Ingredients
- 1 c salted butter melted and cooled
- 1 1/2 c sugar (or a little less)
- 2 Tbl lemon zest
- 2 egg
- 5 pkg true lemon
- 1/2 tsp vanilla extract
- 2 Tbl dried lemon peel
- 2 1/2 c unbleached flour
- 1 tsp cornstarch
- 1/2 tsp baking soda
- 3/4 tsp salt
Lemon Glaze
- 1 cup powdered sugar
- 2 Tbl lemon juice or lime
- 1 tsp lemon zest
- 1 pinch salt

Instructions
- Preheat oven to 350°F. Line a 9x9 (or 10x10) pan with parchment.
- In a large bowl, whisk butter, sugar, and lemon zest until light and fluffy.
- Add egg, yolk, lemon juice, lemon extract, and vanilla. Stir well.
- Add flour, cornstarch, baking soda, and salt.
- Mix until just combined.
- Spread into pan and bake 28–32 minutes, until a toothpick comes out clean or with a few moist crumbs.
- Cool completely.
- Whisk glaze ingredients until smooth.
- Pour over cooled "lemonies" and let set for 20 minutes.
