I discovered some date sugar at a discount store and really wanted to try it. I had read that you could interchange it with brown sugar, but it did not mix in as well as regular sugar did.
We decided to start with our favorite cookies and experiment. The cookies are soft and cake like, but very good! I thought they were a little to sweet, so next time I will reduce the sugars. But everyone else thought they were perfect.
These cookies work well with regular flour if you do not want them gluten free.
Ingredients
- 3/4 cup sugar
- 3/4 cup date sugar
- 1 egg
- 1 1/2 tsp vanilla
- 2 1/4 cup gluten free flour
- 1 tsp baking soda
- 1 1/2 cup mini M&M's
- 1/2 tsp salt
- 1 favorite nuts opt
Servings: dozen
Instructions
- Preheat oven to 375 degrees.
- Beat together butter, sugars, and egg.
- Add flour, soda and salt.
- Mix well. Fold in M&M's and nuts. Dough will be stiff! Let sit for 20 minutes.
- Drop by teaspoonful on ungreased cookie sheet. Bake at 350 degrees for 8 to 10 minutes.
- Take out even if look under cooked, that keeps them tasting really good.
- Remove to cool immediately.
Recipe Notes
Date sugar is sweet. Reduce sugars if needed.
We used Bob's Red Mill 1 to 1 gluten free Baking Flour. I would not recommend flour with garbanzo bean flours in it.
