Chocolate, Cherry, Walnut, No Knead Bread

This easy, no knead bread recipe can be varied in many ways. This is one of our favorites.

This recipe does make a huge loaf of bread. If desired, use all unbleached flour or experiment with your favorite ratio of white and wheat. The finished bread freezes well once completely cooled, but if you prefer to make a smaller loaf, see measurements at the end of the recipe.

Instructions
  1. Mix flours, gluten, sugar, salt and yeast in large bowl to mix.
  2. Pour in warm water and oil and stir till dough forms.
  3. Dough will be sticky and slightly wet feeling.
  4. Cover bowl with plastic wrap and set aside in warm warm place 8-18 hours.
  5. Dough will rise, bubble and then flatten on top.
  6. Heat oven to 450 degrees.
  7. When heated, place a large (6 quart) Dutch oven with cover in oven to heat for 30 minutes.
  8. Add chocolate chips, cherries and walnuts to dough.
  9. Stir dough down, mixing everything in well.
  10. Generously flour a sheet of parchment paper.
  11. Using floured hands, form dough into ball, using more flour if needed.
  12. Place on parchment and sprinkle dough top with additional flour.
  13. Cover with damp cloth (or plastic wrap) and let sit for 30 minutes.
  14. Remove Dutch oven from oven.
  15. Uncover dough and carefully transfer parchment paper with loaf into pan.
  16. Cover Dutch oven and return to oven.
  17. Bake bread 45 minutes covered.
  18. Uncover bread and bake additional +/- 15 minutes until dough is golden brown on top and cooked through.
  19. Remove from pan to cool before slicing.
Recipe Notes

If desired, replace wheat flour with unbleached flour or whole wheat hard white flour. To make small loaf, use 2 cups unbleached flour, 1 cup whole wheat flour, 1/2 Tbl high gluten powder, 1 tsp salt, 1 tsp yeast, 1.5 cups warm water.  (Feel free to use 2 tsp salt if you prefer a saltier tasting bread)
