Our friend Mike is from New Mexico. He thought this would be a good cookie to add to the girls’ baking portfolio. They are super easy to make and great with tea.
Ingredients
- 4 eggs
- 1 cup sugar
- 1 tsp vanilla
- 1 cup lard
- 1 tsp baking powder
- 4 1/2 cups flour
- 1 tbsp crushed anise seeds
- 1/4 cup brandy
- 1 tsp cinnamon
- 1/2 cup brown sugar or coarse granulated sugar
Servings: dozen
Instructions
- Preheat oven to 350 degrees.
- In a large mixing bowl, mix eggs, 1 cup sugar, vanilla and lard till mixed thoroughly.
- Add baking powder, flour, brandy, and crushed anise seeds.
- Combine ingredients into a thick dough.
- Roll dough to 1/4 inch thickness then cut cookies to your desired shape.
- Mix cinnamon and brown sugar in small bowl.
- Dust cookies with granulated sugar and cinnamon mixture before placing on a cookie sheet.
- Bake for 12 to 15 minutes. The bottoms will be lightly brown.
- Cool before storing in airtight container
