Morel Mushrooms (Pan Fried)

We have found morels once before, but this was the first time we have tried them.

Interesting Fact: In some places, morel mushroom are called “Dry Land Fish”.

Cornbread Stuffing

When I asked what type of stuffing to make for Thanksgiving, I was told “cornbread!”. Then we discussed the difference between “stuffing” and “dressing”. In case you do not know, you stuff “stuffing” and bake “dressing” in a casserole dish.

Tomato Basil Parmesan Soup

Years ago, Allan owned a coffee shop. He enjoyed the people he worked with and got to know many of his guests. It was a simple shop, but the foods were good and he worked hard. This was our children’s favorite soup and often requested it when we went to visit Daddy.

Pekoura

Many years ago, we had a friend visit.  Morsal taught Mark how to make Pekoura.  These coated potato slices are wonderful.  You can serve as is, but they are best with plain yogurt or yogurt with cilantro added to it.  

Beef Samosas

I don’t remember having these until we lived in Swaziland. We often had them at church potlucks and, while similar, each family had a slightly different recipe. I preferred the ones with peas, but some used raisins instead.

This recipe is a very mild blend of spices. We often double, or triple the spices depending on who is making the. Fill the wontons with a generous helping of stuffing, but be careful not to overstuff.

For an appetizer, plan on two per person. For a main meal with a salad, plan on 4 or 5 per person.

Twice Baked Potato Salad

Allan bought some potato salad at the market one day and we really liked it. We bought it a few times before we realized it would be a lot cheaper to make it ourselves. While it is not exactly the same, we like it and make this recipe often.

Hummus

There are so many uses for hummus! This is just a starting point recipe for reference. Adjust the seasonings, garlic and tahini to your personal taste.

Egg Rolls

Even though egg rolls seem to be difficult to make, they really are not. They come together pretty quickly also. Since they are treats that we rarely make, we fry them, but you can also bake them if you prefer.

If you prefer, substitute the pork for chicken or mini shrimp. They are great without meat also!
