Simple cookies that do not take a lot of time.
Ingredients
- 1 c butter softened
- 1 1/2 c white sugar
- 2 3/4 c flour
- 1 tsp baking soda
- ½ tsp baking powder
- 1 egg
- 1 tsp vanilla extract or almond extract

Instructions
- Preheat the oven to 375 degrees F (190 degrees C).
- Beat sugar and butter together in a large bowl until smooth.
- Beat in egg and vanilla.
- Stir flour, baking soda, and baking powder together in a small bowl.
- Gradually blend in flour mixture.
- Dough will be slightly sticky, add more flour if needed.
- Roll dough into walnut-sized balls.
- If desired, roll in sanding sugar.
- Place 2 inches apart onto ungreased baking sheets.
- Bake until edges are golden, 8 to 10 minutes.
- Cool on the baking sheets briefly before removing to a wire rack to cool completely.
Recipe Notes
Optional: Replace 1/4 cup flour with cocoa powder. These are extra good with ice cream.
If you like oatmeal cookies, 1 cup flour with 1 1/4 cup oat flour. If desired, replace all the flour with 4 1/4 c oat flour. Let sit for 15 minutes before baking. Sprinkle top with cinnamon sugar.
