Instructions
  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Beat sugar and butter together in a large bowl until smooth.
  3. Beat in egg and vanilla.
  4. Stir flour, baking soda, and baking powder together in a small bowl.
  5. Gradually blend in flour mixture.
  6. Dough will be slightly sticky, add more flour if needed.
  7. Roll dough into walnut-sized balls.
  8. If desired, roll in sanding sugar.
  9. Place 2 inches apart onto ungreased baking sheets.
  10. Bake until edges are golden, 8 to 10 minutes.
  11. Cool on the baking sheets briefly before removing to a wire rack to cool completely.
Recipe Notes

Optional: Replace 1/4 cup flour with cocoa powder.  These are extra good with ice cream.

If you like oatmeal cookies, 1 cup flour with 1 1/4 cup oat flour.  If desired, replace all the flour with 4 1/4 c oat flour.   Let sit for 15 minutes before baking.  Sprinkle top with cinnamon sugar.
