Zucchini Bread

This will either make one large loaf or two smaller loafs. Instead of using flour to dust the pans, these are good dusted with sugar.

“Pirate” Peanut Butter Cookies for “Talk Like a Pirate Day”

The Christie company out of Canada sells boxes of Pirate Oatmeal Peanut Butter Cookies which this is a copycat recipe for. Not sure why they chose the name “Pirate”, but the recipe caught my eye as we were looking for a new way to celebrate “Talk like a Pirate Day” this year. This is a combination of a few recipes and added chocolate chips.

The oatmeal cookies are good plain or filled.

Panic Butter Almond Cookies (GF, DF)

Adrian and two friends came home for Christmas break. They really wanted to cook, but needed to keep the recipe gluten free and dairy free. Over spring break, they perfected this recipe.

Pumpkin bread

This is a sweet bread similar to the recipe we made in cans years ago. While I would not recommend baking this in cans, if you can find a round bread baking tin, fill it a little more than half full and place on center rack to bake.

We reduced the sugar from the original recipe, but reduce it further if desired. Toasted with a little butter is our favorite way to eat it.

Dan’s Cookies

This recipe from a friend from Patmos. These are good, but missing the extra special something that Dan puts in or maybe the camp atmosphere.

These cookies are a little saltier, so reduce salt if needed. Do NOT use salted butter.
