Ingredients
- 1/4 cup Sourdough starter fed
- 1 1/2 cup warm water
- 2 teaspoons yeast Optional
- 3 cups all-purpose flour
- 1 1/4 - 1 1/2 cups whole wheat flour
- 1 1/2 teaspoon fine sea salt
- 1/2 cup sliced pickled Jalapenos or other spicy pepper
- 1 cup heaped sharp cheddar cheese ¼ inch cubes
- 1/4 cup dried chives

Instructions
- Combine sourdough starter, warm water, and yeast (if using).
- Let sit for eight minutes.
- Add flours and salt, and knead until firm, yet slightly sticky.
- Let sit, uncovered, for half an hour.
- Add Jalapenos, cheese, and chives and knead until combined. Dough will be sticky.
- Grease a large bowl and put the dough in it. Cover with a damp towel or plastic wrap.
- Let rise until double* about eight hours or overnight.
- Preheat oven to 450 degrees Fahrenheit with a dutch oven inside.
- Give the dough a single press and fold and place in on a piece of floured parchment paper, seam down.
- Let the dough sit for half an hour.
- Place dough in hot dutch oven, cover, and bake for ten minutes.
- Reduce heat to 425 degrees Fahrenheit. Bake for twenty minutes.
- Remove dutch oven cover and bake until caramel brown on top and registers 200 degrees Fahrenheit in the center. About ten to fifteen minutes.
- Let cool and then enjoy!
Recipe Notes
*If using yeast, rise time is significantly decreased to about three to four hours. You can remove any or all of the flavorings (the cheese, chives, or jalapenos), and/or add any other you would like. We have tried roasted garlic and rosemary, and that is very good. We also have often made it plain without any additions.
