There are so many different ways to make this bean and pasta soup. This is just a rough guideline.

Instructions
  1. Cook and drain noodles and set aside till later.
  2. Cook hamburger in a large pot over medium heat.
  3. Remove from heat, drain well and set aside.
  4. In same pot, heat olive oil and add garlic, onion, carrots, and celery.
  5. Cook 2 minutes till vegetables start to soften some.
  6. Add tomatoes, season with salt (if desired).
  7. Add beans, broth, red pepper flakes, rosemary, oregano, basil and bay leaves.
  8. Simmer till beans are tender.
  9. Remove bay leaves.
  10. If desired, use an immersion blender to mash up to half of the mixture.
  11. Add cooked hamburger and spinach, simmer 5-10 minutes to blend flavors
  12. Add more broth if desired.
  13. Season to taste.
  14. To serve, add desired amount of noodles to bowl.
  15. Add soup and garnish with fresh Parmesan and parsley.
