  1. Heat the honey, butter and sugar in a pan over low heat until sugar has dissolved.
  2. Cool completely.
  3. Add flour, almonds, spices, cocoa powder and egg. Mix well.
  4. Dissolve pottasche in 2 Tbl water and add to mixture.
  5. Knead thoroughly.
  6. Mixture should not be sticky, add flour if needed.
  7. Wrap dough in plastic wrap and leave over night in refrigerator.
  8. Preheat oven to 175 degrees C. (350 F)
  9. Knead dough and roll out on floured surface to 1/2 cm (less than 1/4 inch) thick.
  10. Cut out into favorite shapes and place on parchement lined baking sheet.
  11. Bake in middle of oven for about 15 minutes.
  12. Store in closed cookie tin for many weeks.
  13. Once baked, do not completely cover lid until cookies soften.
  14. Place an apple slice with cookies to keep chewy.
  15. These cookies are supposed to be soft.
  16. Decorate if desired
