Instructions
  1. Remove seeds and cut bell peppers into one inch slices. Set aside.
  2. Wash potatoes and cut into 1 inch cubes. Set aside.
  3. Melt the lard or butter in a Dutch oven over medium high heat.
  4. Cook the chopped onions until translucent and a little brown. It will take around 10 minutes.
  5. Remove from heat and stir in the paprika.
  6. Add beef and garlic, cooking over medium heat until beef is lightly cooked through.
  7. Add bell peppers and cook until peppers are soft.
  8. Add the carrots, tomatoes, potatoes, beef broth, bay leaf, salt and pepper.
  9. Bring to a boil, cover, reduce heat, and simmer until potatoes are soft and beef cubes are tender.
  10. Taste and add more salt and pepper if desired.
  11. Serve with bread and butter and a nice salad.
Recipe Notes

Do not use green peppers.  They will change the taste of the dish.
