Instructions
  1. Saute onion and 1 cup celery in olive oil 5-6 minutes.
  2. Add ginger and garlic and stir just until fragrant.
  3. Add cold water and salt.
  4. Add chicken breast and turn heat to medium.
  5. Bring the broth to a gentle boil.
  6. As soon as it starts boiling gently, flip the breasts over.
  7. Remove pot from heat and cover with a tightly fitting lid.
  8. Once the chicken breasts register an internal temperature of 150° on an instant read thermometer, remove from broth.
  9. This will usually take about 5-10 minutes.
  10. Do not over cook!
  11. Remove breasts from water and cool slightly before cutting.
  12. Save broth for other recipes.
