Empanadas

This is very similar to what our Spanish tutor said her mom made when SeƱora Swart was growing up in Argentina. Since 8 April is National Empanada Day, we decided to surprise her with some during our lesson.

White Chili (with Chicken)

This is an easy, make ahead soup for cold days. We usually keep it on low all day in the crock pot and serve with corn chips or corn bread. Also, to reduce the cheese a little, instead of putting it all in the soup, set some aside to use as garnish.

You will need at least 2 cups of broth, but we usually use more. Use your favorite method to poach the chicken breast, or use this recipe. Leftover broth can be saved for another recipe.

Grandma Mabel’s Chili

We were given this recipe during the McGuire 2003 family reunion. We have adapted it a little, but tried to keep it very close to the original. Serve with saltines or your favorite corn bread.

Hummus

There are so many uses for hummus! This is just a starting point recipe for reference. Adjust the seasonings, garlic and tahini to your personal taste.

“Dorito” Popcorn Spice


We found this recipe a few years ago and I can not remember where.  It is a favorite topping for popcorn.  We often double or triple the batch so we have it on hand.

 

Curry

We enjoy curry in many ways.  Allan came up with this simple recipe.

Curry with bones, the way Allan prefers, thickens the sauce better and has more pronounced flavor.  I prefer not to have to dig out bones while eating, so make it how ever you prefer.

To stretch the curry more, use more onions and tomatoes and adjust spices.  You can also add diced potatoes and peas if desired.
